member of the mint family (Lamiaceae). Native to Southern Europe, particularly
the Western Mediterranean to Southern Italy, this woody herb grows up to 15–20
cm in height and 40 cm in width. It features small, aromatic, greenish-grey
leaves and clusters of pale purple or pink-white flowers blooming in late
spring or early summer. Today, the largest producers of thyme oil include France,
Morocco, Spain, and India.
